pear pie


Questa crostata è perfetta per la primavera e facilissima da fare.
This pie is perfect for spring and so easy to make.

per la pasta:
120 gr. di burro
220 gr. di farina
1 cucchiaio di zucchero
un pizzico di sale
4 cucchiai di acqua gelata

per il ripieno:
6 pere
20 gr. di burro fuso
cannella
2 cucchiai zucchero di canna

Nel mixer unite la farina, lo zucchero e il sale e amalgamate.
Aggiungete il burro e mixate fino ad ottenere delle grosse briciole.
Unite l'acqua un cucchiaio alla volta fino ad ottenere un impasto unico.
Lasciate riposare in frigorifero per almeno un'ora avvolta nella pellicola.
Sbucciate le pere e aggiungete la cannella, lo zucchero e il burro fuso.
Stendete la pasta, distribuite uniformemente le pere e ricoprite con la pasta rimasta.
Cuocete in forno a 180° per 40 minuti.

for the crust:
120 gr. butter
220 gr. flour
1 tablespoon sugar
a pinch of salt
4 tablespoons ice cold water

for the filling:
6 pears
20 gr. melted butter
cinnamon
2 tablespoons brown sugar

In the mixer combine flour, sugar and salt and mix.
Add the butter and mix until the mixture forms large crumbs.
Add the ice water a little at a time and pulse until the dough forms a ball.
Let rest in the fridge for at least an hour, wrapped in plastic wrap.
Peel and slice the pears, add the cinnamon, the sugar and the melted butter.
Roll the dough, pour the pear mixture and cover with remaining dough.
Bake in pre-heated over to 180° for 40 minutes.

Manu: the crust recipe is from the Williams Sonoma book and the filling is just what I had in the house!
